Zusammenfassung: Bell peppers of three varieties were processed and packed. First the doses between 0 - 750 Gy were evaluated with the most radiosensitive variety. Subsequently, the effect of the combination of irradiation and type of packaging on the quality of cut bell peppers was monitored for 12 days at 5 ° C and 90% of RH. Finally, the quality of the bell peppers mixture was evaluated under the best conditions. The measured variables were: physical-chemical parameters, visual, sensory and microbiological quality and CO2 generation inside the packaging. Additionally, the content of phenolic compounds was determined by spectrophotometry and vitamin C and carotenoids by liquid chromatography at the 0 and 12 days of storage for each variety and the mixture. As a result, it was determined that the dose of 250 Gy and the combination with the PET tray helped to maintain the quality of the three varieties and the mixture, keeping the characteristics of quality up to 12 days of storage. Regarding the bioactive compounds content, there was an increase of phenolic compounds in the green and red varieties and the mixture and a decrease in vitamin C and carotenoid content in the three bell pepper varieties and the mix.
Beschreibung: Pimientos de tres variedades fueron procesados y empacados. Primero se evaluaron las dosis entre 0-750 Gy con la variedad más radiosensible. Posteriormente se evaluó la combinación de irradiación y tipo de empaque sobre la calidad del pimiento cortado por 12 días a 5 °C y 90 % de HR. Finalmente con el mejor tratamiento se evaluó la calidad de la mezcla de pimientos. Las variables analizadas fueron: parámetros físico-químicos, calidad visual, sensorial y microbiológica y generación de CO2 en el empaque. Adicionalmente se determinó el contenido de compuestos fenólicos por espectrofotometría, vitamina C y carotenoides por cromatografía líquida a los 0 y 12 días de almacenamiento para cada variedad y para la mezcla. Del estudio se determinó que la mejor dosis de 250 Gy y la combinación con la bandeja PET ayudaron a mantener la calidad de las tres variedades y de la mezcla, pues a los 12 días de almacenamiento aun mantenían las características iniciales. En el contenido de compuestos bioactivos, se tuvo un incremento de compuestos fenólicos en las variedades de color verde y rojo y la mezcla y una disminución en el contenido de vitamina C y carotenoides en las tres variedades de pimiento y el mix.
