Abstract: The present study was carried out in order to elaborate a protein drink based on soya and naranjilla, with antioxidant characteristics and rich in proteins, using soya (Glycine max) and naranjilla (Solanum quitoense). The process began with the obtaining of soya milk and the pulp of the naranjilla. The addition of spices cinnamon, chamomile and sweet pepper to the drink was made through an experimental design 32 analyzing the acceptance of the infusions obtained with the spices mentioned in a ratio of 3.75; 5.5 and 7.5 g / L through a sensory evaluation. The results of the sensory analysis showed that the infusion with cinnamon at a concentration of 5.5% had the highest acceptance. Stabilizers were added under a 32-factorial design with two replications, using stabilizers corn starch, CMC (carboxymethylcellulose) and xanthan gum at concentrations of 0.01%; 0.05% and 0.1%. It was determined that the xanthan gum stabilizer, at a concentration of 0.01%, gave the best stabilization results. For the incorporation of sugar and naranjilla pulp, a mix design was used, in which the upper and lower sugar limits were 7% and 13%, and for the naranjilla pulp, 4% and 10%. It was determined through a sensory analysis that the formulation with 7% of naranjilla pulp and 10% of sugar presented the highest acceptability. The results for the physicochemical tests were: 5.36 +- 0.13 of pH, 2.84% +- 0.23% of protein and for color; L: 40 +- 0.13; a: 7.8 +- 1.0 and b: 40 +- 3, the antioxidant capacity was 0.31 +- 0.006 mg of ascorbic acid / mL and the polyphenol content of 0.62 +- 0.028 mg gallic acid Eq / mL, finally The shelf life of the beverage was 45 days when the drink was stored at 4-6 ° C.
Description: El presente estudio se realizó con el fin de elaborar una bebida proteica a base de soya y naranjilla, con características antioxidantes y rica en proteínas, empleando para ello soya (Glycine max) y naranjilla (Solanum quitoense). El proceso inició con la obtención de la leche de soya y la pulpa de la naranjilla. La adición de las especias canela, manzanilla y pimienta dulce a la bebida se realizó a través de un diseño experimental 32 analizando la aceptación de las infusiones obtenidas con las especias mencionadas en una relación de 3,75; 5,5 y 7,5 g/L a través de una evaluación sensorial. Los resultados del análisis sensorial mostraron que la infusión con canela a una concentración del 5,5 % tuvo la mayor aceptación. Se agregaron los estabilizantes bajo un diseño factorial 32 con dos repeticiones, usando los estabilizantes almidón de maíz, CMC (carboximetilcelulosa) y goma xanthan a concentraciones del 0,01 %; 0,05 % y 0,1 %. Se determinó que el estabilizante goma xanthan, a una concentración del 0,01 % brindó los mejor2es resultados de estabilización. Para la incorporación del azúcar y pulpa de naranjilla se empleó un diseño de mezclas, en el cual, los límites superior e inferior del azúcar fueron del 7 % y 13 %, y para la pulpa de naranjilla del 4 % y 10 %. Se determinó a través de un análisis sensorial que la formulación con 7 % de pulpa de naranjilla y 10 % de azúcar presentó la mayor aceptabilidad. Los resultados para los ensayos fisicoquímicos fueron: 5,36 +- 0,13 de pH, 2,84 % +- 0,23 % de proteína y para el color; L: 40 +- 0,13; a: 7,8 +-1,0 y b: 40 +- 3, la capacidad antioxidante fue de 0,31 +- 0,006 mg de ácido ascórbico/mL y el contenido de polifenoles de 0,62 +- 0,028 mg ácido gálico Eq/mL, finalmente el tiempo de vida útil de la bebida fue de 45 días cuando la bebida se almacena a 4-6 °C.
