The union of the essential oil and oleoresin are the resin is in a 4 to 7.5% in the rhizome. When the rhizomes are dried, the availability of these early increases, although it is important to select the proper drying conditions because these principles are volatile at high temperatures. In order to ascertain the nature of the process of drying the rhizome, were constructed drying curves at different temperatures (55ºC, 65ºC and 75ºC) using a hot air oven, and was extracted from the oleoresin of material dehydrated to verify that a greater degree temperatures kept the aromatic and pungent principles of ginger. The results of the extraction percentage, showed higher conservation of active ingredients in the drying at 75ºC and it is interesting to note that during the first 90min, generated greater moisture loss in contrast to temperatures of 65ºC and 55ºC, these being of 88%, 83% and 78% respectively. From a technological standpoint and nutrition, thermal processes are designed with high temperatures at short times, are important to avoid nutritional losses and functional by the excessive heat during drying, for this reason, the drying process started at 75◦C during the first 90 min, and ended at 55ºC to reach equilibrium moisture content of 12 %. The change may allow the drying to be there in less
