dc.description.abstractEl jengibre es un rizoma que presenta componentes químicos que aportan beneficios a la salud de quien lo ingiere, estos se conocen como principios aromáticos (α-zingiberene, ar-curcumene, β-bisabolene) presentes en el aceite esencial y los principios pungentes ([6]-gingerol y el [6]-shogaol), presentes en la resina. La unión del aceite esencial y la resina constituyen la oleorresina que se encuentra en un 4–7,5% en el rizoma. Cuando los rizomas son deshidratados, la disponibilidad de estos principios aumenta, aunque es importante seleccionar las condiciones adecuadas de secado porque estos principios son volátiles a altas temperaturas. Con la finalidad de conocer las características del proceso de secado en el rizoma, se construyeron las curvas de secado a diferentes temperaturas (55◦C, 65◦C, y 75◦C), utilizando una estufa de aire caliente, y se realizo la extracción de la oleorresina del material deshidratado para verificar que temperatura conservo en mayor grado los principios aromáticos y pungentes del jengibre. En los resultados del porcentaje de extracción, se observo mayor conservación de los principios activos en el secado a 75◦C y es interesante destacar que durante los primeros 90min, se genero mayor pérdida de humedad en contraste con las temperaturas de 65◦C y 55◦ C, siendo estas de 88 %, 83 %, y 78%, respectivamente. Desde el punto de vista tecnológico y nutricional, los procesos térmicos que están diseñados con altas temperaturas a cortos tiempos, son importantes para evitar pérdidas nutricionales y funcionales por el excesivo calentamiento durante el secado, por esta razón, el proceso de secado se inició o a 75◦C durante los primeros 90 min, y termino a 55◦C hasta llegar a la / Ginger is a rhizome that has chemical components that provide health benefits to those who eat it, these are known as aromatic components (α-zingiberene, ar-curcumene, β-bisabolene) present in the essential oil and pungent principles ([ 6]-gingerol and [6]-shogaol), present in the resin. The results of the extraction percentage, showed higher conservation of active ingredients in the drying at 75ºC and it is interesting to note that during the first 90min, generated greater moisture loss in contrast to temperatures of 65ºC and 55ºC, these being of 88%, 83% and 78% respectively. From a technological standpoint and nutrition, thermal processes are designed with high temperatures at short times, are important to avoid nutritional losses and functional by the excessive heat during drying, for this reason, the drying process started at 75◦C during the first 90 min, and ended at 55ºC to reach equilibrium moisture content of 12 %.
