Zusammenfassung: Resumen .- Los objetivos de este trabajo fueron: identificar los hongos productores de ocratoxina A en el almacenamiento de café de una finca que funciona como centro de acopio en la provincia de Sucumbíos; cuantificar la concentración de la toxina y diseñar un secador rotatorio de cerezas de café para evitar el crecimiento de hongos y la generación de ocratoxina A (OTA). Se analizaron dos muestras, una tomada en la época seca y otra en la lluviosa. Se encontró que el hongo Aspergillus carbonarius es el hongo productor de OTA presente en las muestras y que existe una mayor producción de esta toxina durante la época lluviosa. Se realizaron las curvas de crecimiento microbianas y se encontró que el periodo de crecimiento máximo de los hongos fue al séptimo día, por lo que se recomendó que el periodo de almacenamiento de los granos no deba ser superior. Otro aspecto a tomar en cuenta para la determinación de la capacidad del secador, fue la necesidad de los agricultores. Se construyeron diferentes curvas de secado a diferentes condiciones para determinar la más eficiente. Se determinaron las características necesarias del aire de secado (60 ºC, 60 % HR y 2,5 m/s de velocidad de flujo de aire). Con base en los balances de masa y energía se determinó también la temperatura del café a la salida del sistema, así como los flujos de las corrientes. El equipo diseñado tiene una longitud de 17,85 m, diámetro de 0,55 m, procesa una cantidad de 2,27 toneladas en 8 horas, tiene una inclinación de 0,003 radianes y gira a una velocidad de 3,5 rpm. La humedad final de las cerezas de café fue de 0,0785. Abstract .- The main scopes of this work were: Identify the fungi that produce ochratoxin A during coffee storage in a farm that serves as a warehouse center in the province of Sucumbíos; quantify the concentration of the toxin and design a rotary dryer for the coffee cherries in order to avoid the growth of fungi and the generation of ochratoxin A (OTA). Two samples were analyzed. One was taken during the dry season and the other during the rainy season. It was found that the type Aspergillus carbonarius was the OTA producer fungi type found in the samples and that there is a greater generation of the toxin during the rainy season. Microbial growth curves were built and it was observed that the highest growing point was at day 7. Then, it was suggested that the maximum storage period should be of 7 days. Another point of view that had to be taken on account was the farmers’ need. Different drying curves were built in order to determine the one that is most efficient. The air characteristics were determined (60 ºC, 60 %HR and 2,5 m/s as flow speed). The outlet temperature of the coffee cherries was determined with the mass and energy balances, as well as the fluxes of the different currents. The equipment that was designed is 17,85 m long, 0,55 m wide (diameter) it has a process capacity of 2,27 tons in 8 hours, it has 0,003 radians of inclination and rotates at a speed of 5 rpm. The coffee cherries reached a a final humidity of 0,0785.
