Abstract: This work describes the development of a manual for the use of sludge generated in the meat processing WWTP of the chain of Supermercados Santa María S.A., in the Mejía canton. The investigation began with the identification of all wastewater generating activities, among the main ones we have cleaning of slaughter, storage, cutting and packing facilities of cattle. It was determined that the main contaminants are fats, detergents and solid material, it was also identified that there is a grease trap and a grit remover, prior to treatment. Wastewater treatment is carried out by biological treatment of activated sludge, which generates biosolids at the end of the process, these are dehydrated by means of a filter press. For the purpose of our study, they were quantified an masse within a period of time, and later characterized and analyzed by an accredited laboratory. Said analysis determined that the residual sludge does not have CRETIB dangerous characteristics in its composition, in addition the amount of nutrients was quantified, which allowed choosing an alternative for adequate use. Finally, a manual was elaborated that describes the technique of direct application of residual sludge on the ground as long as all the requirements established in the regulation CFR 40 PART 503 "Norms for the Use or Elimination of Residual Sludge" of the Agency of Environmental Protection of the United States (US-EPA) and the Official Mexican Standard NOM-004SEMARNAT-2002. This manual is easy to understand and was delivered to the company.
Description: El presente trabajo describe la elaboración de un manual, para el aprovechamiento de lodos generados en la PTAR de procesamiento cárnico de la cadena de Supermercados Santa María S.A., en el cantón Mejía. La investigación inició con la identificación de todas las actividades generadoras de aguas residuales, entre las principales tenemos limpieza de instalaciones de faenamiento, almacenamiento, corte y empaque de reses. Se determinó que los principales contaminantes son grasas, detergentes y material sólido, también se identificó que se cuenta con una trampa de grasa y un desarenador, previo al tratamiento La depuración de las aguas residuales se realiza por tratamiento biológico de lodos activados, lo cual genera biosólidos al final del proceso, estos son deshidratados mediante un filtro prensa. Para efecto de nuestro estudio fueron cuantificados en masa dentro de un periodo de tiempo, y posteriormente caracterizados y analizados mediante un laboratorio acreditado. Dicho análisis determinó que los lodos residuales no poseen características de peligrosidad CRETIB en su composición, además se cuantificó la cantidad de nutrientes, lo que permitió elegir una alternativa de aprovechamiento adecuada. Finalmente, se elaboró un manual que describe la técnica de aplicación directa del lodo residual sobre el suelo siempre y cuando se cumplan todos los requisitos establecidos en la normativa CFR 40 PARTE 503 “Normas para el Uso o Eliminación de Lodos Residuales” de la Agencia de Protección Ambiental de los Estados Unidos (US-EPA) y la Norma Oficial Mexicana NOM-004SEMARNAT-2002. Este manual de fácil entendimiento y fue entregado a la empresa.
