dc.descriptionEl presente trabajo de tesis se enfocó en incrementar la productividad del semielaborado en el restaurante de comida rápida Juane´s Papi Burger, mediante la implementación de la metodología Lean Company, sin afectar la calidad del producto. Se elaboró el “Layout” de la planta y se levantó información de los 5 procesos de semielaborado más importantes para el restaurante. Para la obtención de datos, se siguieron los procesos paso a paso, el tiempo que demoran las actividades fueron mediadas con un cronómetro. Con los datos obtenidos se elaboraron cursogramas sinópticos, cursogramas analíticos y diagramas de recorrido. Se calificó el ritmo de trabajo y la estimación de las tolerancias que permitió calcular el tiempo base y el tiempo estándar. Se determinó la productividad y se identificaron también las actividades que generan valor desde el punto de vista del cliente para calcular la eficiencia del ciclo del proceso. Se diseñó un nuevo “Layout” de la planta y posteriormente realizaron modificaciones a la misma para mejorar el flujo de los procesos, se completó con un evento “kaizen” en donde se implementaron las 5 S´s. Con los nuevos procesos en funcionamiento se volvieron a tomar datos para realizar las respectivas comparaciones.es_ES
dc.description.abstractThis thesis is focused on increasing the productivity of the semifinished product in the fast food restaurant Juane's Papi Burger, by means of implementing the Lean Company methodology, without affecting the quality of the product. The "Layout" of the plant was elaborated and the information was collected on the 5 most important semifinished processes for the restaurant. To obtain data, were the processes followed step by step and the time that the activities were delayed were measured with a stopwatch. With the data obtained, synoptic cursograms, analytical cursograms and travel diagrams were elaborated. The work rate and the estimation of the tolerances that allowed to calculate the base time and standard time were rated. Productivity was determined and the activities that generate value from the customer's point of view were also identified to calculate the efficiency of the process cycle. A new "Layout" of the plant was designed and later modifications were made in the plant to improve the flow of the processes, which was completed with a "Kaizen" event where the 5 S's were implemented. With the new processes in operation, data were taken again to make the respective comparisons.es_ES
