dc.description.abstractLa presente investigación tuvo como finalidad la obtención de los deshidratados de borojó y copoazú con el uso de procesos térmicos de secado con aire forzado. La fruta provino de los huertos del Instituto Nacional Autónomo de Investigaciones Agropecuarias (INIAP), en la provincia de Orellana. Se utilizó un diseño completamente al azar en 20 tratamientos, con un rango de temperatura de 55 a 75° C y los tiempos de secado de 8 a 20 horas, en un secador con aire forzado a una velocidad constante de 3,25 m.s-1. Las condiciones del proceso seleccionadas para el borojó es con la pulpa descongelada de 4,50 mm de espesor, temperatura 60º C y 6 horas de secado. Para el copoazú se seleccionó la pulpa descongelada o fresca de 3 mm de espesor, temperatura de 75° C y 8 horas de secado. Los deshidratados seleccionados tuvieron las mejores características físico-químicas (humedad, actividad de agua, color, pH y acidez titulable) y microbiológicas. Para el borojó y copoazú, la actividad de agua (aw) fue de 0,49 y 0,32, la humedad de 14,72 % y 15,91 %, respectivamente, principales parámetros requeridos por el mercado. Se midió el nivel de preferencia de los consumidores para el producto; para lo cual se utilizó los deshidratados en dos formulaciones de jugo; y del seleccionado se realizo una prueba de aceptabilidad donde se preguntó en una escala de siete puntos, desde me disgusta muchísimo hasta me gusta muchísimo, donde las variables de respuesta eran el color, sabor y aroma El tiempo de vida de anaquel de los deshidratados se estableció con base a la relación de la aW durante el almacenamiento a condiciones de ambiente y forzadas, estableciéndose 2 meses para el borojó y 7 meses para el copoazú. Se realizó la evaluación de los costos de producción de 30 t de fruta por año a nivel de planta piloto, se obtuvo para una presentación de 250 g para el borojó y copoazú en 4,00 y 4,50 USD, respectivamente. La rentabilidad calculada sobre el capital propio fue de 18,69 % y sobre la inversión total 11,22 %. El punto de equilibrio se alcanzó al operar el 67 % de la capacidad instalada.es_EC
