Resumen: El presente proyecto de titulación tiene el objetivo el diseñar y simular un control automático para una Cámara de Fermentación Controlada de pan atreves de autómata programable (PLC), guiándose en el proceso de fermentación controlada. Esto con el fin de eliminar el trabajo nocturno del panadero y promover la construcción de este tipos de cámaras el nuestro país. Este proyecto conlleva varias fases. La primera fase contempla el estudio del proceso de Fermentación Controlada, donde se estudia las etapas que consta el este proceso y los rangos de temperatura, humedad y tiempos manejados en cada una de ellas. En la segunda etapa se establecen los parámetros de diseño en la cual funcionará la cámara, y de este modo se seleccionaran los diferentes sistemas que deberán implementarse en la cámara para poder desarrollar el proceso de Fermentación Controlada. Los sistemas que se seleccionarán son: de refrigeración, calentamiento, sensores de temperatura y humedad, y un sistema humificador. En la tercera fase se desarrolla el diseño del programa basado en el proceso de Fermentación Controlada, estableciendo las temperaturas, tiempos y humedad que se manejará en cada una de las etapas del proceso. Esto con el fin de lograr que el sistema responda según los requerimientos de diseño. En la cuarta fase se desarrolla el programa que a través del controlador lógico programable es capaz de llevar a cabo el proceso de Fermentación Controlada, mediante el control de la temperatura, humedad relativa y tiempo del sistema.
