Resumen: This research was focused on assessing the fitness malting barley of 15 genotypes grown in 4 locations, to select promising materials with the best quality values for the production process of malt extract. Initially characterized physically barley genotypes were evaluated: the 1000-grain weight, test weight, filling rate and color; these physical parameters, allowed the status and conditions of the study material. Subsequently, in order to transform grains into malt, barley genotypes were malted, this process involved three stages: steeping, germination and toasted. Initially, barley genotypes were physically characterized, which involved evaluating the weight of 1000 grains, hectoliter weight, filling rate, and color; these physical parameters allowed to know the state and conditions of the material been studied. Later, barley genotypes were malted in order to turn the grains into malt, this process involved three stages: Soaking, germination, and roasting. Once obtained the malt, the following physical and chemical parameters were evaluated: malting recovery, mealiness index, total protein content, diastatic power and a-amylase content. Following evaluation, mashing technique until obtaining the wort from each malted genotype. The following physical and chemical variables were evaluated: conversion time, filtration rate, extract percentage, turbidity, soluble protein content, Kolbach index, and color. Through statistical analysis, high significant difference in both genotypes and localities and their interactions, in all study variables was determined. These results show that there is variability in the genetic characteristics of genotypes and climatic conditions in each of the locations. The genotypes CM-09-003, CM-09-009, and SCARLET, showed higher malting quality parameters, so they were selected for the process of obtaining malt extract. Three different modes of concentration were applied: by opened pot, by lyophilization, and by vacuum dehydration. The first of these, the best values were obtained in performance and the genotype that stood out was the CM-09-009, which it was used for calculating the production costs of malt extract and basic plant desing.
Descripción: La presente investigación se enfocó a evaluar la aptitud maltera de 15 genotipos de cebada cultivados en 4 localidades, para seleccionar los materiales promisorios, con los mejores valores de calidad para el proceso de producción de extracto de malta. Inicialmente se caracterizó físicamente los genotipos de cebada, se evaluó: el peso de 1000 granos, peso hectolítrico, índice de llenado y color; estos parámetros físicos, permitieron conocer el estado y las condiciones del material de estudio. Posteriormente, a fin de transformar los granos en malta, los genotipos de cebada fueron malteados, este proceso comprendió tres etapas: remojo, germinación y tostado. Una vez obtenida la malta se evaluaron los siguientes parámetros físicos y químicos: recuperación maltera, índice de harinosidad, contenido de proteína total, poder diastásico y contenido de α-amilasa. Luego se aplicó la técnica de macerado, hasta obtener mosto de cada genotipo. En estos, se evaluaron las siguientes variables físicas y químicas: tiempo de conversión, velocidad de filtración, porcentaje de extracto, turbidez, contenido de proteína soluble, Índice de kolbach y color. Mediante análisis estadísticos, se determinó alta diferencia significativa tanto en los genotipos como en las localidades y sus interacciones, en todas las variables de estudio. Estos resultados muestran que existe variabilidad en las características genéticas de los genotipos y en las condiciones ambientales en cada una de las localidades. Los genotipos CM-09-003, CM-09-009 y SCARLET, mostraron mayores parámetros de calidad maltera, por lo que fueron seleccionados para el proceso de obtención de extracto de malta. Se aplicaron tres modalidades de concentración: por olla abierta, por liofilización y por deshidratación al vacío. De la primera de estas se obtuvieron los mejores valores en cuanto a rendimiento y el genotipo que destacó fue el CM-09-009, el cual fue utilizado para el cálculo de los costos de producción del extracto de malta y el diseño básico de planta.
