Abstract: The objective of this work it was studied the effect of partial replacement of wheat flour by broken rice flour in the production of bread. Mixtures of wheat flour and broken rice flour in ratios of 90:10, 80:20, 70:30 y 60:40, was developed. With the application of experimental design, the addition of CMC (0,5 and 1 %) was evaluated on dough characteristics and the final product. The study on rheological behavior of the dough was developed by farinography and rheology. In addition, the main parameters bakery such as water absorption, kneading time and fermentation time, was established. Also the retrogradation enthalpy increases with storage time and the content of broken rice flour. However, it decreases with the presence of CMC. The evaluation of bakery aptitude realized by the highly qualified panelists found the suitable treatments were those with 10 and 20 % with broken rice flour, with and without CMC. With the bakery parameters obtained in the experimental part, an industrial bakery plant was designed with a capacity of 15 t/day. The production process was established with the respective mass and energy balance. Also the economic analysis was performed by defining financial indicators, thus they found that the project is feasible.
Description: El objetivo de esta investigación fue estudiar el efecto de la sustitución parcial de harina de trigo (HT) por harina de arrocillo (HA) en la producción de pan. Para lo cual se elaboraron mezclas con HT y HT, en razones de 90:10, 80:20, 70:30 y 60:40, y mediante la aplicación de diseño experimental, se evaluó la adición de CMC (0,5 y 1 %) en las características de las masas y en el producto final. El comportamiento reológico de las masas, se desarrolló mediante farinología y reología. Se determinó los parámetros de panificación: la absorción de agua, el tiempo de amasado y el tiempo de fermentado. Se encontró que la entalpía de retrogradación aumentó con los días de almacenamiento y el contenido de harina de arrocillo, sin embargo disminuyó con la presencia de CMC. Con la evaluación de aptitud panadera, realizada por panelistas expertos, se identificó que los tratamientos aptos para panificación fueron los que contenían 10 y 20% de harina de arrocillo, con y sin CMC. Se diseñó una planta industrial con capacidad de 15 t/día, estableciéndose el proceso productivo, con los respectivos balances de masa y energía. Además del estudio financiero, que determinó que se trata de un proyecto factible.
